TEQUILA

Tequila is a distilled spirit made with the Blue Weber Agave (agave tequilana) and can only be officially produced in 5 states in Mexico - Jalisco, Michoacan, Nayarit, Guanajuato, and Tamaulipas.  In order to be called tequila, it must contain at least 51% Blue Weber Agave.  Here at A'Toda Madre, we only sell 100% Blue Weber Agave tequila.   There are 4 main expressions of tequila - Blanco (also called Silver or Unaged), Reposado or "rested" (aged from 2 months to 364 days), Añejo - (aged a minimum of 1 year), and Extra Añejo - (aged for a minimum of 3 years).

MEZCAL

​All tequilas are mezcals, but not all mezcals are tequilas.  Mezcal has often been misrepresented as "smoky" tequila.  That is like calling champagne "carbonated" wine.  Mezcal is an amazingly complex spirit that can be made from over 30 different varieties of agave - some of which grow wild and are so rare that only a very limited number of bottles can be made in a batch.  Mezcal can only be produced in the following states of Mexico - Oaxaca, Guerrero, Durango, Michoacan, San Luis Potosi, Guanajuato, Tamaulipas, Zacatecas, and Puebla. A'Toda Madre has the largest variety of mezcal in the Philippines.

RAICILLA

​Raicilla is a traditional Mexican spirit that hails from the state of Jalisco, known for its rich history and unique production process. Distilled from the agave plant, similar to its more famous cousin, tequila, raicilla sets itself apart with its distinctive flavor profiles. Unlike tequila, raicilla can be made from various agave species, often wild and uncultivated, resulting in a broader spectrum of tastes, ranging from earthy and herbal to fruity and smoky. Its rustic, small-batch production methods, typically involving pit ovens and copper stills, add to its artisanal charm. As a relative newcomer to the international spirits scene, raicilla has gained popularity among connoisseurs and adventurous drinkers seeking to explore the diverse world of Mexican agave spirits.

BACANORA

Bacanora is a distinctive Mexican spirit originating from the Sonora region, made from the agave plant. Similar to mezcal, it boasts a rich heritage deeply rooted in local tradition. What sets bacanora apart is its production from the Agave angustifolia Haw plant, often referred to as agave Pacifica. The plant is harvested, roasted in earthen pits, crushed, fermented, and then distilled, resulting in a smooth and smoky flavor profile. Bacanora has gained popularity among enthusiasts due to its unique taste, reminiscent of mezcal but with its own nuanced character. Its growing recognition in the world of spirits reflects the increasing global interest in diverse and authentic agave-based beverages.

SOTOL

Sotol is a lesser-known but remarkable spirit originating from northern Mexico, particularly in the states of Chihuahua, Coahuila, and Durango. Distilled from the Dasylirion plant, often referred to as the Desert Spoon or Sotol plant, this spirit offers a distinct and earthy flavor profile. Unlike agave-based spirits like tequila and mezcal, sotol comes from a different succulent plant, giving it a unique taste that captures the essence of the region's rugged landscapes. The production process involves harvesting the plant's core, or piña, which is roasted, fermented, and then distilled. The resulting spirit is often described as herbal, slightly vegetal, and subtly sweet, making it a favorite among those seeking a taste of authentic, regional Mexican spirits. Sotol's growing popularity showcases a broader appreciation for diverse and lesser-known traditional liquors in the world of distilled beverages.

Others

There are other agave spirits that are just as unique and interesting as the ones we have already listed, but do not yet have a Denomination of Origin (D.O.) from the Mexican government such as Tuxca and Pulque.
